It's about my education, culture i live in, but food is a sacred stuff to me.
It's one of our deepest need and one of our greatest lust possible.

So tonight I made myself a guacamole, nothing difficult, most of time simplicity is one of the greatest quality of a great recipe. And while enjoying the 5mn it tooked me to make it and the 20mn it tooked me to eat it with lot of pleasure, I was meditating about how great this recipe is.

There we go for a little travel if you wish, cause I'm high too, I mean, what would be a guacamole without a mijoto and a J ? An awesome stuff.

So you need avocados, tomatoes, onions, lime and spices, a bowl, a knife and a cutting surface like, wood plate and a spoon.
How simplest that could be ? How greater about cooking basics could be find ? How freaking awesome this stuff is ? I don't give a shit, I'm high and fuckin loving it.

Cut your oignons in fine slices. Let's say one onion or 3/4 shallots, or half of an onion plus 2/3 shallots. As you see you got some creativity possible here : for example onions are allium vegetables, a family with other good tastes like the one given by shallots, which is beautiful with beef. If your guacamole is going to be served with beef, really dude give shallot a try instead of onions. Try, taste enjoy, that's cooking. Raw onions or shallots have an other quality : they are crunchy. Taste and texture that mostly all about food is. Plus slicing is an art which is greatly possible to start with onions, shallots, garlic... You need a good knife, like cutting crazy well. I love Moraknife such as the "companion", it's not expensive cook knife, it's more about bush-craft and survival, but for a tiny price it's the hell of a great knife blade. Nothing to be ashamed of in a kitchen. It asks a good blade but a good technic too. This kind of blade can cut your nails too you know. But there's something really kungfu about slicing well and fast. And you know, cooking well, like making nice slices of onions, is just like loving people you're about to feed. The best of yourself you give into it, the better it will be. That's one of the amazing stuffs about food.

Cut tomatoes and mix it to onion's slices.
Clean tomatoes first, you know, you don't want to poison yourself and your friends, clean it under water to get rid of pesticide shits. Then enjoy cutting. You can do many different cuts, defined with size and forms. Good size here is "tiny but consistent" watever you like you know, cooking is all about attempts, having several sizes can be interesting. As ever taste is important, and because of spices you can have fun with tasty punchy tomatoes. Mind about texture too, tomatoes will be some king of middle path between crunchy alliums and creamy avocado. Important thing is also the chemical effect of allium on tomatoes, the more you'll let the mix together the more you'll get some kind of cooking tomato into onion acidity. That's interesting too and you can play with it.

Put your avocado into the mix. Cut it half, take first half without the seed, take the delicious creamy flesh away with a spoon. A knife little kick it the seed will help you get it away like a screw, there you go, taking the flesh with your spoon. Avocado teaches a first thing : choosing fruits and vegetables by their state of maturation is damn important. You want it tasty and creamy. Add some lime juice, limit is your taste sense, it's gonna make you guacamole punchy but must not take all the taste away, equilibrium. But you need it because lime acidity will restrain avocado oxydized which means brown dirty yurk. Equilibrium between taste and looking. That's an other important thing about cooking. Look will be the first sense, just before smelling to interact with a plate.

Add spice. You can find ready made spices, which is OK; or you can make it your own, which is OK too but more exhausting and personal. The spice mix will tell about you and your will to please. My belief : if you'll feed friends, trust on industrial spices until you know about your own mix. If you do it for your own, don't lose a chance to taste / test a different mix.

Mix avocado with onion and spices. You know, the more you mix it the more it gets creamy. You can play with different creamy aspect, like really creamy mix of avocado, or more made of pure avocado parts, or like both making a sweet cream and add avocado cubes.

Let the mix get fresh; serve with chips or other stuff.

It's simple, fresh, healthy, full of raw legums and fruits and tasty. It shows how much you care. It's tasty good like love can be. Cooking can be more than spending time for a survival purpose.

So well, yeah, finishing my mojitos, and, wow, really dudes, it may worth the effort. Cheers !

I just can't bring myself to eat guac. I've tried it and it wasn't bad but it's just a texture thing with me. I'm more of a salsa gal.

But, the Dudette abides.

I agree with iAbide81 on the guac thing, I can never bring myself to eat it even though I know it's good. I think I just psych myself out about the texture. Is it weird to let texture ruin something for you even if the flavor is good?

Good guac is AMAZING but I fail constantly at even the modest task of preparing it myself.  I have to order it at places I know do it right.  I've been trying recipes though to find the one I dig and this one sounds worth giving it a shot.  My dad's recipe was my last attempt and he garlic bombs the hell out of it... might as well be pesto sauce.  Major nasty.

Great initial post to this thread. Very well written.

I didn't like guacamole for years and then, boom, about three years ago I started loving the stuff. It's a goddamn super-food. Avocados have about the healthiest fats in the world. Throw in some tomatoes (Vit A, C, and K), onions (organic sulfurs, flavonoids, and phytochemicals), and garlic (selenium, anti-viral, and ferroportin precursor). And, what do we have here? Fuckin' food nirvana, that's what, bro.

I like to gently roast the tomatoes, onions, and garlic. It cuts the bite and brings out a sweet, smoky flavor. But fresh, perfectly ripened, avocados are the key. Oh, and a shit-ton of lime, salt, and pepper. Other than that - keep it simple. Seven ingredients.
