Did anyone catch weed wars on discovery. Of so, what happened to them as I missed the last episode after they were hit with a huge tax bill?

The Federal Paraquat shut down many of the dispensaries where that was happening.
Including the one in the show.

i dont understand the whole state versus federal government thing. if the state legislated the licensing of medical use, how can the federal government over rule them. what is the point of states choosing their own laws then?

Well in fact the first (and probably only) laws against any drugs are Federal.
We see that in the past states have differed on the penalties which they do decide.
Weed was decriminalized in many states.
But the main issue is called "The Supremacy Clause" of the US constitution.
In a nutshell it says that when state and federal laws are in conflict the feds win.
