Yeah, well, sometimes you eat the bear, sometimes the bear eats you. Sometimes your lady friend wants to become your special lady. And since there is something more that makes a man than being prepared to do the right thing at all cost, well, a wedding is something that can happen.

But I prefer for now to be just the officiant.

That is fine, a wedding is something that can happen every time. A friend would be a bride of you, or you would be a groom of your lady friend. Just like that, even if you don't really know the lady when you've found your heart wants to marry her then it is going to be a wedding.
