There is a ongoing coffee theme in TBL.

The Dude drinks white Russians, a coffee flavored beverage.

The police chief bounces a coffee cup off the Dudes head.

Also in part of the dialog in the script that was omitted from the actual movie coffee is mentioned when the Dude makes the police report
Cop says to the Dude in his apartment "Most people, we're working nights, they offer us coffee."
Then the Dude says "Me, I don't drink coffee.  But it's nice when they offer."

In the diner Walter stays to finish his coffee.

And Donnie is put to rest in a coffee can.

Also the Dude mashes his face into Jackies glass coffee table, which might be a stretch
but this whole coffee thing might just be, not, you know, not just such a simple, but uh--you know?

Given all this new information I think perhaps Coffee is used thematically to mean life. Or mortality.
Life being also a theme.

In the script the dialog when they emerge from the bowling alley to find the Dude's car burning Walter says..
"A tree of life, Dude.  To all who cling to it." Didn't make the movie. The rombom thing instead.

In the Big L's house it is a Life Magazine cover mirror with the words "are you a Lebowski Achiever?"

And we learn that Bunny's life is in the Dude's hands.The Big L specifically asked Brandt to repeat that.

And earlier while the Dude is convinced that Bunny kidnapped herself Walter says
"Life does not stop and start at your convenience, you miserable piece of shit."

In the limo the Dude says "Yeah, man!  Fuck it!  I can't be worrying about that shit.  Life goes on!"

And Walter will only break shabbas if it is a matter of life and death.
