Home brew beer... Kaucasian

SO..

i am ordained... and i am also an avid homebrewer... i have been brewing beer for about 2 years now... brewed over 20 different batches...

so after making my first recipe of my own (its still in the secondary) i feel the need to make something complex... A Kaucasain...

if there are any other homebrewers out there... tell me what you think

I am wanting to do a coffee milk imperial stout... and go heavy on the lactose...

it should come out strong around 10 percent.... with very large coffee and cream notes...

the only thing is i am thinking of using less barley and less black patent... and maybe less chocolate and more crystal 120 or 80... to give it more of a sweet flavor than so much of a stout flavor...  so more like a porter ... i just dont want to have it such a dark color... but i still want some of the roasted notes from the darker grains... so i guess its more like a coffee cream imperial porter... aka the Kaucasian of beers



if anyone has any ideas for a way to make it more like it... let me know... the problem i am running into is the color of beer is on the red to orange side... so if i go to light on color it turns light brown to dark red... it wont turn creamy no matter how much lactose i add hhahahahaha

any suggestions would be nice... and when i am done... if you live on the east coast... let me know... it should be ready around the christmas time frame or early janurary

Yeah, I believe we have a few home brewers here on the forum...at least we did.

well... undudely news has happened... i have to put this beer off for at least one more week

unless someone wants to go pick up the grains for me hahahaha.... i have to work tonight... and the next night... something came up.... so i will be working 12 hour shifts every night.... until it gets resolved.... booooo

but i was told next saturday i can have off no matter way... so its a brew date...
